Olive loaf'in around christmas time

Inspired by Chops pickle loaf he just made I decided to do an olive loaf. Its based on len poli's olive loaf recipe. I modified ingredients in the recipe and used tender quick instead of cure #1. No smoke here as it was done in the oven so temp control was not possible. Cooked on the lowest oven setting. Dehydrated 2 jars of Goya olives and pimiento's. Next time I'll double the amount and use 4 jars. Added some soy protein Isolate as a binder. Mixed together, bakes and set in the fridge to cool. Released the mold and sliced. Good stuff. Needs a little more seasonings amount added to the recipe and it will be even better. Some q-view of the process..... Made 2 loaves

That's fantastic ! I looked at Poli's olive loaf when I did the pickle loaf .
I really like doing the lunch meat stuff . Great post bud .
