As most of you know I am a full time RVr. I used to do my own mixes but storing all the bulk dry is a PITA. I have found there are some really great pre mixes out now. One that i will say is my go to for sticks and SS is Owens BBQ mixes. I also use UMAi mixes for my dry style salami. AC Legg, LEM & Townsend Spice are also ones i use.

This batch is UMAi Old World SS mix.

I mix the cure and SS mix together before mixing into the meat.

I mix in layers mixing by hand. Water i only use on my gloved hands for mixing.

I was going to use the UMAi Stuff Tuff casing but i am out so im using fibrous instead.

Nice. I think I'm ready to dip my toe in the art of dried meats. I'll be asking a lot of questions in the near future.

BTW, are the umai bags reusable or is it a one time deal?

The Stuff Tuff UMAi are more for SS style semi dry using cure #1.
Yes all the UMAi bags/casings are one and done.
 
Sliced and chubs are vac sealed. Good mix.
