Protein lined collagen middle is pealing pretty good with no water soak (happy)

Slight case hardening but does not affect the texture or taste.

The other 3 chubs are going to get 10-15 more days of hang time.
 
Looking good.
Wish I could find a way to eliminate the case hardening.

I'm taking inventory now to see what's in the freezer.
Getting ready to make another run at it.
Plan on Pepperoni sticks (1st attempt), Summer Sausage, Genoa Salami, and Calabrese Salami (also 1st attempt).
