Hi All, I am from Minnesota and have been smoking on a BGE with BBQ Guru for around ten years. Late 2012 I purchased a Smokin-It Model 3 and it has really saved me a lot of cold outside work this winter. Also the results and cooking space is excellent. I liked the results out-of-box but felt room for improvement. My friends know me as a modder - I can hardly leave anything stock. Therefore, my Smokin-It is now PID controlled, has a variable speed convection fan, and variable output convection element (still very easy to operate and cheaper than burning lump). I am a union electrician by trade and an ex appliance technician so the only difficult part was drilling all the holes in stainless.

I also just received  an AMNPS and drilled extra air inlet holes in my. Still need to test that. My reason today for joining the forum is to eventually leave some feedback for a thread by Smoke Happens on the AMNPS in the SI #3.

I primarily smoke ABT's, butts, cheese, eggs, and occasionally brisket but my significant other is leaning more towards vegetables and vegan products. I hope that word is allowed
