Okra Fritters

My new favorite summer side dish.

1 pound okra sliced 1/4 inch.
1 cup diced onion.
1 or 2 diced jalapenos
1 egg
1/2 cup water or beer. I used Crooked Tree IPA from Dark Horse. Mix well.

1/2 cup flour
1/2 cup corn meal
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cayenne powder.
Mix well.

Mix wets and dries to form a gloppy mess.

Drop spoonfuls into hot oil. I like to use my 9 inch cast iron with about 3/4 inch of oil on the side burner of the gasser. It doesn't stink the house up. Flip when the bottom turns golden brown. Remove and drain on some paper towels when the top is done.

Becca and I like them with a little Ranch. They are served up here with a molasses brined loin chop. They didn't last long.

We do this with zucchini. I have never thought about okra . I bet it is tasty
 
hmmmmm....Loved fried okra. Never thought of doing like a fritter. Will be on my radar for the next time i cook okra.
