Alright, all you Oklahoma state fair goers, need your opinions.  Show that just ended on the Travel Channel was showcasing different foods from state fairs around the country, and an outfit called Smokin' Pistols were deep frying spares in OK City.  Coated with yellow mustard, rubbed with salt/sugar/paprika/cayenne and then deep fried as a rack--then ribs sliced individually and fried again.

I fully realize that you can find anything under the sun deep fried at state fairs, but this is one that I haven't run across and has my curiosity up.  I'd think it would have bacon-like leanings, but wanted to see if any of you have had this and had an opinion--good, bad, or indifferent.  Gracias!

Deep fried ribs.???

That sounds great.

May have to experiment with this.

Had a chance to try deep fried ribs once. Don't know if it was prepared all the same way but it tasted pretty good.
Did it taste more like bacon than ribs?  I'd think for a home application, someone would be hard pressed to do a full (or even a half, for that matter) rack because of the size limits on home fryers, so I'd think you'd have to go individually or max 3 bones to start before the second singular fry.

Tasted a bit sweet. Not sure how much was due to whatever rub was on them. Tasted mostly rib like but almost had a bit of a combination ham\bacon taste with the aftertaste as well.

I'm not familiar with a restaurant in Oklahoma called Smokin Pistols and I'm coming up empty Google searching. Any clue where they're from? I'd be willing to make a road trip for scientific purposes.

I didn't find anything on them either:  may be just on the carney circuit, and the State Fair site says to check back at a later date.  Younger couple (20s--early 30s) behind it.  It was on "Food Paradise" episode called "Feasting at the Fair"--it's scheduled to air again Saturday afternoon 3/11 at 2EST/1CST.  They served traditional spares, and then deep fried as I'd described above.

Hmm...going to have to watch that one.

Also had "The Big E"--a combination of the New England states, rolled into one fair--and NM State Fair on that episode with the specialty foods found within. If there was another reason to watch, the gal doing the fried ribs was quite easy to look at....
