I am doing my first larger smoke this weekend on my Offset. a brisket, and couple pork shoulders. I just installed the tuning plates two weeks ago, but I am unsure as to how to place the brisket and pork. should it now go fat down because of the tuning plates? Or does it not really make a difference.

Cooks some biscuits. It will let you know where the hot spots are
 
Mine is hotter at the end with the firebox even with plates.
Go with the fat side up regardless, at least at first.
 
Just do the pork shoulder (butt) first and rotate periodically.
Do you have any probe thermometers?
