Hey guys midnightdinner here. Been getting into smoking this past summer and man o man is it fun, and addictive. I just moved from downstate Michigan to Michigan's beautiful Upper Peninsula. I've been smoking kinda like a hillbilly and want to take it a bit more seriously. I have a barrel smoker and go in the woods behind my house to find random hardwoods to smoke with and so far so good. But I know i can get my meats so much better if i learn more about this art of smoking. I've been doing a lot of fish this summer, mainly Northern Pike and Bass, but also did a bit of venison, turkey, and chicken. I plan on using my barrel smoker till probably next spring. I think I want a 55gal drum smoker with a side attachment for cold smoking, I also want to build it. Hope some fellow smokers hit me up on here and give me some good advice and Ideas. I do know quite a bit about cooking, but know very little on smoking. Hope to hear from you guys, I'm sure I'll be active on this site!
