Happy Easter SMF folks! Looks like Ham is the word for Easter but I did not have one so I did a massive ST. Louis style Rib Rack for dinner instead.
Dry brined it Saturday night with another gifted BBQ rub called "Copper's BBQ Rub" which consists of the following:
1/4 cup dark chili powder
1/4 cup smoked paprika
1/4 cup ground cumin
1/4 cup granulated garlic
1/8 cup coarse ground pepper
1/8 cup kosher salt
1/4 cup brown sugar
Pinch cayenne pepper
Mix together and rub with love.
So I yellow mustarded it up and rubbed it.
On the REC TEC after a couple of hrs @225 with Lumberjack 100% Pecan Pellets
Did the 3-2-1 method so here it is before the wrap
Here it is out of the smoker after 6 hrs resting.
And sliced up after resting. Nice bark.....
Here is a plated view of both meals. Ribs, Sweet Potato with butter and honey and corn with green onions.

Dessert - Homemade Peach Crisp Sue made with pantry goods.

All in All it was a nice really nice meal. The rub had a little kick to it and the ribs were juicy and tender, and the dessert was an excellent finish.
