Not all cuts are created equal...for cook times

Before, you ask for pics, sorry but I didn't take one. Believe me, it was an awesome sight.

I bought a prime packer brisket from costco @ $2.89/lb. I have a Traeger big tex smoker and used mesquite pellets for the cook. Up at 5AM, 34 degrees outside, temp rising up to around 55 at the peak. Cook temp was 225 for entire cook.

Packer was 11.77 lbs in the wrapper. I trimmed 3 lbs of fat, leaving a thin cap on top.
I ground 1/4 cup of black pepper, equal amount of salt and half as much ground garlic powder. Gave a good rub the day before and wrapped in frig.

Hit stall around 165 for about 1.5 hours. 7 hours in, I wrapped in foil with some beef stock. I did not remove the cap for burnt ends and left intact. Back on smoker.
Within 2 more hours, temp was 202 for a total of 9 hours cook time??? I have never had one cook this quickly before and thought my probe was wrong. Last two brisket cooks were between 11 and 12 hours!!! Used another digital probe and 202 was confirmed.
Placed in cooler, wrapped in towels, 2 hours later, opened the foil wrap. I'm guessing final cooked weight at 5 to 6 lbs. Served with mashed potatoes and fresh green beans with the au jus.
I swore I heard angels strumming their harps.
