Hello everyone I am new to the smoking world.  I just bought a Char-Griller Super Pro a few days ago.  I normally just slow cook meats on my friends for about 2 hours with coals and soaked wood chips.  I have a few questions about the Char-Griller Super Pro. 

Im thinking about picking up the SFB this weekend...or can I get away with out it and use a charcoal basket on the vent side and move the meat to the far left and slow cook it by adding chunks of wood one top of the coals for smoke?

I came up on some Pecan Wood chunks and will be using that.  I might go get some oak to go with it. 

Any thoughts would be great.

First off Welcome Block to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

This weekend I plan on installing the SFB, making a custom made charcoal basket, dryer duct mod, and maybe a baffle depending on how saucy I feel.  Im going to use the original main Charcoal holder and flip it upside down and move it all the way up.

Rain is going to be around this weekend but I will do a test run xmas weekend!

I know that area well - I was raised in El Segundo and lived in Torrance, ReCondo Beach, Westchester and Santa Monica.

Ahhh okay the beach cities!  Yup that is where I be.  The mods went good, I got the dyer duct on, ran two more temp gauges on each side of the barrel lid, got the SFB on, and made a charcoal basket.  It was some what a PITA to get the knockouts out but it ended up good.  Let see what happens with this rain, i hope to get something going for xmas day!

Good luck with that! Family are always the best guinea pigs for a new smoker. Your mods sound good. And the worst thing that happens is you have to eat "okay" smoked meat (which is still better than any other meat!).

Welcome,  You are bound to get some great info here.  I recommend SMF to anyone who really wants info on how to smoke.  Great to see more socal members aswell.
