Hey y'all, I'm interested in buying a real smoker for brisket, ribs, hams, turkeys, etc.  I've been using a Little Chief for several years to make jerky and to 'pre-smoke' ribs & chops before grilling.

I would like to buy a 'real' smoker and need some advice on what to get.  I live in a fairly cool, rainy area, and don't have a covered area to put it.  I've tried using my propane grill, but in the fall / winter / spring, I can't get it to maintain a constant temperature (it's a stainless CharBroil -great for warm weather, but it loses too much heat in cool & rainy weather).

Any advice would be much appreciated - I'm willing to spend the money to get the right smoker.  Thanks!!

Sounds like you need something with some insulation like an MES if you don't mind going the electric route. I'm down here in the south so I don't have any problems with the cold but I'm sure some of our polar bears will be along to help you out!
