Easy peasy.

Just weigh your ingredients, mix shaggy, cover and let it go over night...Dont fold, knead or stretch.

Unfed, flat, hungry starter
Untouched (mixed, covered)
Unheated oven.

Recipe:
400g water
165g flat starter (Unfed)
650g bread flour
15g salt

Mix
Cover
Bulk ferment overnight
Shape
Bench rest 1 hour
Score
Place in cold oven
Set timer for 1 hour and oven to 450*
Temp at timer and continue baking at 425 uncovered until 205* internal temp.

I put a damp towel over the bowl then the bowl cover, this way the dough dont dry around the edges.

Be waiting to see what it looks like in the morning . I'm doing something about the same , but I go in the fridge overnight . Did one yesterday , have 2 for today .

I was doing the starved starter , but adding yeast . Doing like this activates / feeds the starter ?

Nice towel trick . I just bought a bunch of the shower caps , and yes it gets to dry on the edge .

Dont know how sour y'all like but I can smell the sourness.

All I did was do the first shape, then inverted the bowl to cover.

10 min rest.

I've done this several times. It doesn't produce Instagram worthy crumb :) but it sure tastes good. 1200g +/- works great in a loaf pan.
