No Casing Sausage Sticks on Butcher Paper?

Has anyone tried using butcher paper for smoking sausage sticks without a casing? I know people use it for wrapping bbq so it still gets smoke. Just not sure if it would work for that good.

Grates wouldn’t support the sticks and I don’t have any other way to support them in the smoker without a casing

I believe a member here has done them with a jerky gun and on mats,though the butcher paper is an interesting idea.

If your ready to do them now , I have used foil and sheet trays like said above , then when firm enough I move them onto the racks .
 
I use the frog mats/fiberglass-silicone screen. Works great.
 
I think you might end up disappointed. I covered some raw meat with unlined butcher paper once and it stuck to the pieces when I removed it. If you wanted to try paper i would suggest parchment paper first, but honestly the Qmats would be my first choice over paper...better air/smoke flow and less likely to become a mess.
 
I've laid them on foil or parchment paper with holes and slits cut in them. never had a problem. you don't need any mats.
