Just do it! It seems intimidating but it's really easy. Just mix a batch of pops brine up and your good to go. Next it belly bacon and doing a boneless butt for ham. I definently prefer the apple and hickory over the cherry wood I used last time.
 
I did the butt ham last weekend and it was great. Bacon and CB are next. Your CB looks great! Nice picture too....LOL
