I have only been smoking for about a month now but have enjoyed it tremendously!  I have always loved to create new dishes and redo old recipes.  This outlet is a natural progression for me.  My wife and just bought our home that one day we will retire to on the coast.  It had a large double metal detached carport out back that I have floored to give me a covered deck.  The final size turned out to be 19 x 32 foot, we called it the beast as we built it.  That is where I have my smoker and other tools to use.  I love getting out there and creating or just reading recipes on my laptop.  I so look forward to learning from all of you and will try not to bug you too much with my questions.  My smoker is a gas unit I bought from Homedepot.  The main problem I am having is the metal roof has half sides that end up holding the smoke in, making it a tough enviroment to be in.
