Hello all I'm Kevin. I'm new here and am fairly new to smoking. I have an MES 30 and just aquired a LG 700 pellet grill. I love bbq/smoked meats and decided to start making them for myself as my favorite local bbq closed down. Pic is of my first attempt at spare ribs. Used my own rub cocoction and smoked for 6 hours at 235 on the mes. Mix of apple wood and hickory chips. The family was quite happy with the results.

Howdy from Texas Kevin! Lost of pellet folks here. Always room for another! B

Hello! The ribs look good. What was in your rub? I feel like the rub I put together is missing something, so I'm going to have to do some more research.

The rub I make is as follows
3tbs medium ground pink salt
2 tbs black pepper
2 tbs garlic powder
3 tbs paperika
2 tbs onion powder
1tbs ancho chilled powder
1 tbs dry yellow mustard
1/2 cup brown sugar
I used mustard as a sticking agent.

Welcome to SMF lot of grest guys and gals on here with tons of info.

I use the same things and a few more, coriander, celery salt, cayenne. No ancho chili powder which sounds good. It's got regular chili powder. I don't use dry mustard, but use plain, wet yellow mustard then the rub over it. With the pink salt, do you mean Himalayan pink salt or curing and brining type pink salt?

Maybe I've got too many things in it or I need to play around with the proportions.
