So I'm reading these threads on smoking cheese. Obviously don' t want heat in the smoker, so do I just use my pellet tubes and no smoke from the smoker ? Or do I run my smoker on the "Smoke" setting and use tubes also ? TIA
 
What type smoker you have,How low of temp does your smoke setting run at, you really dont what any heat if possible so I would just use the tube if you can get enough draft in smoker to keep the smoke fresh.
 
Got the small Pit Boss. I believe the lowest temp setting is 200, but it does have a "Smoke" setting. I'll have to fool around with it, or maybe read the manual .
 
You will need to create a draft so the smoke doesn't go stale. My pellet pooper, the fan will run when I power it on but no heat til I set the temp and start it. I just run a tube of pellets for 3 - 4 hours with the fan running. I put the cheese on frogmats sitting on the grates. I also rotate the cheese halfway through for even color.
