Hi everyone! Just found this forum and had to sign up. Looks like lots of great information here. Can't weight to suck up some knowledge and maybe some gooood cookin. I'm retired and its just my wife and I so I want to try to figure out how to do smaller portions. Cooking too much results in waste which we don't want..
 
Welcome to the site, forget about smaller portions. Get yourself a vacuum sealer. You won't regret it.

I agree with gmc2003! It's just the wife and I also, and if I do cook to much, which I do a lot of, I can bag and seal and freeze for later. Brisket and left over ribs can be used for so much more.
 
Welcome from Northwestern PA. Lots of great info here. I'm sure you'll enjoy... I agree with the above, you can never cook "too much". Smoked foods that are packaged for later sure come in handy when you don't have the time to prepare fresh...
 
Welcome! Retired and same situation here in Indiana. Don't sweat smoking an amount of meat. Get a vacuum sealer and you're good to go!
