I enshrined a smokehouse made from an old outhouse from my father in law but never had the chance to watch him use it as he passed away a few month ago. I am going to try and smoke some wings but have questions on how to do so. Sorry if this is a stupid question but I'm guessing i need to soak the wood chips and do I place them on top of hot charcoal? Second question is he has a small gas grill in there as well. Do I skip the charcoal and just fire up the mini gas grill and put the soaked wood chips on there? Last question, what's the recommended temperature and wood flavor should I use. Using a dry rub for the wings. Also added photos.

No need to soak chips or any wood. It will just steam and smolder. It doesn't help create a clean fire which is what you really want.

So I would put dry wood chips on top of the charcoal or should I put them in a smoker box over the coals?

If I was doing this.. toss un-soaked chips on to coals. Try to keep temp 250ish. Skin may turn tough, if so throw it on the grill to crisp. But most important.. have drink and relax!!

I would say chips if you have never tried it before. I use chunks as they tend to last longer. Nice thin blue smoke is what you want. No need to soak um. Keep temp around 235 to 250. Just have fun and drink some beers. Keep on smokin
