Hey everyone I am a newbie here, just picked up and finished seasoning my MES 30 smoker and being a single person its sometimes hard to cook for one person. I do cook mostly chicken breast's and some pork at times. So I am looking for simple things that I can do on my smoker. Thanks everyone

I am tring to find some simple things that i can do. Since its only one person i don't want to do a 9 pound brisket or big pork shoulder.
 
Try a chuck. Do you have a vacuum sealer and freezer? Seal, freeze then reheat bags in boiling water. Almost as good-and sometimes better-than freshly smoked. They've had time to develop that good smoky taste. This way your options become limited to only your imagination (and of course the pocketbook).
 
Hi there and welcome.

Don't let smoking for yourself deter you.   Toss whatever you can in there to make stuff for later.

couple extra chickens then shred up left overs for smoke chicken salad or chicken taco's  

I can make a million things with leftover pulled pork.  smoke your veggies, sides you don't have to make alot

but you can get the most out of your smoking time that way.

I work opposite my fiancee alot so I'll fire up the smoker for just me ... I know I'm selfish.  HA HA   but I'm 

not gonna starve and I'm gonna eat good when I am cooking for myself.

Oh my goodness, ya like chicken soooooo...... I like to smoke mine whole. I get a smoked chicken meal, then I cut up some chicken for mac, green pea w/ smoked chicken Salad, Of course there is Chef J. Folse's "Oodles of Noodles" recipe substituting smoked chicken for "Popeye's, Mom's smoked chicken salad, or the best is a pot of smoked chicken gumbo. Oh my goodness, the gumbo goes over so big I have started cooking it for a communal bonfire on the levee on Christmas eve, If any is left ( hasn't happened yet), you can freeze it for a fast supper. It's really hard to beat smoked chicken. Well maybe if you have smoked turkey and no chicken available. LOL. 

Nice to meet you, its a great place to meet some outstanding cooks, and just some dang nice folks.
