Newbie from Nebraska.

[/IMG]Started smoking this year. Started out with a small offset smoker. Had a long learning curve. Thought the more smoke I had trapped in smoker the better. After visiting this site I basically found out the opposite is true. The last few smokes have been great. Oh I've built a bigger offset smoker. Todays smoke included beef ribs, meat loaf, beef roast, potatoes and asparagus, yellow squash, mushrooms, jalapeños.
