Hello all

Well this is my first time owning a smoker. It's a Brinkmann charcoal smoker. Won it in a contest. How good is this smoker? Going to do my first smoke this week. Smoking a 10.5 lb beef brisket.

So how often do I add charcoal to keep the temperature constant? Should I use regular charcoal or pre-soaked charcoal (Match Light)? Oh and do I place the applewood chips in the water pan?

Look forward to using the forums on a regular basis.

Glad to have you here with us at SMF.  You can find a lot of information using the Search Bar tool at the top of the page, just type in what you want info on and it can find it.  Also check out the WIKI section, in it you will find a bar of letters, my advice is to click on the All button and you will get several pages of alphabetized information on how to do about anything,  I can not stress the importance of the FREE 5 Day E-Course, for anyone who is just starting out smoking it is invaluable.  I had been smoking meat for about 6 years when I first got it and I learned about a lot of things that I had had problems with and things I had never even thought about so be sure and sign up for it. Be sure and check out the sites that Craig mentions above they have some good information.  You should do plenty of research here before your first smoke so have at it.  Moon Dog, the most important thing I can tell you is that the only dumb question you can ask here, is the one that you do not ask!  Oh yeah, you never use match light charcoal or lighter fluid if you don't want you food to taste like lighter fluid, use a charcoal chimney to light your charcoal.  Again, we are glad to have you here with us and we all started out where you are today so jump right in!

 to the addiction. I started out with the same smoker. I am finishing up my first home built rig now but bet you will get alot of use out of the brinkman. Check out the search bar for advise and mods to help ya along with it.
