Good evening all. I just found this site and have found it to be living encyclopedia of preparing, smoking and storing all kinds of foods. I am glad I found you.
My name is Paul and I hail from Fredericksburg, VA area. I'm semi-retired and live on a nice 10 acre ranchette with a well stocked 4.5 acre.
I have always been the typical Southern Redneck who grills his pork chops, ribs and steaks (when I can afford one) on a K-Mart high end grill with charcoal. Last year, I ran across a Pit Barrel Cooker and fell in love with it. Last Christmas, I smoked about 10 turkeys for friends and family and had rave reviews.
I am not interested in competition cooking or becoming a famous smoking guru like many of you on this site. I'm a Redneck leisure smoker and only smoke when I am damn good and ready and have copious amounts of beer on hand.
With that said, I am also a scientist at heart and have thoroughly enjoyed the more scientific articles on smoking, packaging, etc but the light banter back and forth between you old timers is what really makes the day for the rest of us novices.
