Newbie from Central Florida

    Hey all.  I'm charles.  I'm new to smoking.  I have always wanted to try it but never got around to it.  My buddy and I recently tried smoking a brisket.  As a newbie, I think this was a horrible idea.  We didn't smoke it long enough.  I kept telling my buddy that we should smoke it longer but he was adamant about geting it to 165 and calling it a day.  Other part too is that we didn't plan very well and already had people over and it was at 165.  As far as flavor, it was great.  The only issue was that it was tough.  We also did smoke some wings at the same time since we already had the smoke.  The wings actually were really good.  Everyone seemed to really enjoy them.  Luckily i had a couple from when we tested the first batch cause the second batch disappeared pretty quick.  Now that I've gotten my feet went, I'm all about smoking more.  

    I've done a ton of research and as much as I wanted a wsm I couldn't justify the cost as a newbie.  I hope that I can do the modifications on a master forge green smoker (essentially ecb) and get almost the same results as I would with a wsm.  I am already pretty sure how I plan on modding it.  I'm gonna do the fiberglass rope on the lid, drill 2 holes and add gaskets for a maverick digital thermo.  I'm gonna leave the original thermo in.  I figure with the maverick I am all set and am only really leaving the original thermo in to plug the hole.  I'm gonna add top vents and rig a way to close the bottom.  I'm also gonna mod the firepan and getting a 13.5 inch grate.  I have heard people messing with the water pan but I don't plan on doing that.  I am thinking about capping all the wingnut holes with extra glue from the fiberglass rope.  I am trying to figure out how to best seal the fuel door.  I was thinking about just adding aluminum foil around.  I saw someone using a heat tape but I worry about adding adhesives.  I plan on trying to get all this done in the next couple of days and hoping to smoke something this weekend.  Any advice would be great.  I look forward to learning from everyone here and turning out some good food.

    Welcome aboard, Charles!  Glad you joined us.  You've found a great place to learn and share ideas.  Lots of friendly and knowledgeable folks here who really enjoy helping one another.  Good luck with the mods on that new Master Forge, and just ask when you need help and you'll get plenty.

    Thanks. I am doing my first smoke in it today after the modifications. I went to ace hardware and got aluminum flashing to make an ugly damper. (I don't mind as long as the food is good). I also used the flashing to make a cent cover for the bottom vent. I started it around 330. Got the meat in it after it hi 220 and it's been hovering around there for the last 3-4 hours without me doing anything. I added a channel in the coal with some aluminum mesh I found in the BBQ section. Did the minion method I start the coals. I am pretty happy with it. Lets hope I get a good end result.
