I have been making my own fresh deer sausage for the last couple of years and this season I want to start smoking some of it. I have a Char Grill Smoking Pro that I use for regular meats but have not tried my sausage on it. I was wanting to learn about the curing process prior to smoking and I think I have found this site to be very helpful.
