While I'm happy with my progress as a cook. I see all of these great meals that are being made on this forum and can't wait to give them a try and become an even better cook\ pit master.

Thinking about the new things I did up last year. Brings me happiness and a feeling of accomplishment. Smoked cheese, jerky, tri tip, salmon candy, stuffed pork loin are just a few new things I did.

For 2019 my goals are to give sous vide and sausage making a try. Also plan to do up Prime rib, moink balls and spend some more time on the grill now that I got a Webber 22" kettle for Xmas.

So what are some of your BBQ/ cooking goals for 2019?

Look forward to hearing about them and even more excited to reading about them and seeing pictures on how they turn out.

Going to try my hand at making bacon (literally, not figuratively ;)). I've assembled the cure and seasoning. Now I just need the MRS. to give up the bottom shelf of the fridge for a couple weeks.

Get a fridge somewhere for your "Curing Fridge". If your MRS. has trouble with the first stages, she probably won't like your post smoked bacon laying there aging and smelling up the lettuce and Milk carton.

I realized I couldn't put my smokey bacon in "her" fridge, so I got a small (4.3 Cu. Ft.) fridge (no freezer).
Now, my beer cans have a nice smoked bacon scent. LOL!
And there is Peace in the Valley.

I have a nice "Disco's Bacon" (Back Bacon, Canadian Bacon) aging in my outdoor (curing) fridge. Might be slicing today.
But today is undecorate day. Pack away Christmas till next Christmas. :emoji_slight_frown:
 
Brisket is #1 on my list for new things, the trouble is finding one that's not $7.99/lb but I think I found a place. Also smoked fish is on the list, but that's dependent on what I catch ;)
 
Don't know if you have a Costco near you, but they frequently have prime grade brisket on sale for 2.99 or 3.99 lb (at least the ones near us do).

There is one not too far but as a single guy I have a bit of trouble justifying a costco membership. I'll check it out though, maybe I'll get a "try us out" flyer in the mail.
 
Get a better paying job and buy a sports car.....oh you mean BBQ resolutions...

Probably smoke some cheese, maybe a bologna, and a strip roast. i might buy a sous vide setup and play with that!

I have a single friend just like you who doesn't want to spend the money on the membership. But he's got a friend like me who has a Costco membership.

Maybe you've got a friend like me somewhere in your contacts?
 
I got jerky cannon for Xmas so I'll be venturing out into the sausage world shortly. Small scale of course.

If you have another friend that wants to join just split the Costco membership up two ways. We do that with my son.

Try my hand at bacon and posting more pics of my smokes - I do take them just about every time, but just get too lazy to post them
