  1. Have a question. Trying salmon candy for first time using a cajun injecter smoker.should I use water in water pan or not

    Hmmmmm,  I've done Salmon candy before and have never injected it.  Also, most candy Salmon is almost a cold smoke.  Don't know why a water pan would come into play.

    Can you share your particular recipe which requires a water pan?
