New to the site but have been smoking for about 5 years now. I started out smoking baby backs on my char griller gas grill making smoke packets with aluminum foil with wood chips and placing them over the burner and the ribs on the other side of the grill and trusting the grills thermometer. Moved on to master built vertical propane smoker after about 6 months of smoking on my grill and just this summer got a used brinkmann offset smoker and with tips I read on this forum modified it to a pretty decent offset smoker. I started using apple on everything and still be to use apple to now using everything from hickory and oak to cherry and pecan and recently tried maple and was pleasantly surprised at how much I like maple! Now everytime I'm in the woods I find myself looking at what the types of trees and how easily I can get to them to cut them down to smoke with them! Looking forward to learning form everyone on here and sharing what I've learn during my short time at doing this!
 
Welcome from across the Chesapeake! Am just getting into the offset game as well, finishing up a refurbish on a used one I picked up in King George a couple weeks ago
