I guess I am supposed to start here. I am from Beaumont, CA not TX.. I own a Large green egg and a 4 rack Bradley smoker. I used to work at a store that sold Islands and BBQ equipment and that's how I got into it. I love to cook and was looking for new ideas and found this forum thought I would check it out.
