Hi from Washington state I have been smoking meat for 15 years with a homebuilt reverse flow stickburner and recently decided to try building an electric fired smoker just for snack sticks, summer sausage and salmon. I had given to me an electrical cabinet given to me. It is 4'x3'x2' deep, I will insulate all of it with 2" of roxul and sheet metal. So I'm still researching heating elements and such, do you think a 1500 watt element is going to be enough or would 2 elements be in order, whats your thoughts?
 
BB, welcome ,my electric smoker is a bit bigger than what you are making and I have one 1250 watt burner BUT my temps will only go to 250*
