Hi there,

I've been smoking for years and have started a build on a horizontal smoker and want to hear some pro's and cons of reverse flow vs direct flow.  Any words of wisdom are welcome.  Also modifing a char broiler side box smoker and wondering if a baffle is needed for tunning plates or if I should just run tuning plates straight across the smoker??
