Just joined the forum and from one post know more about smoking than I learned in the month of trial and error!

I'm originally from Long Island NY but moved to Middle America around 14 years ago.

I live in Central Iowa and as my name implies I love to be outside. I'm an avid outdoorsman who eagerly awaits the change from one season to the next for hunting, fishing, boating or anything I can do outside.

Have loved to cook since I was a kid spending hours in the kitchen with my Grandmother or Dad helping taste test and learning all the Italian recipes that were never written down or measured.

Have always loved to grill and have been known to move the grill to just outside the back door for the winter so I didn't have to keep digging it out of the snow.

Brand new to smoking, just got my first smoker (Masterbuilt propane extra wide) for Father's Day.

My attempts so far have been:

Pork shoulder that everyone liked.

Pastrami that only I liked

Two attempts at sticks that only the dogs really looked forward to eating

Thanks to some advice from S2K9K, I will be making some mods to my smoker to better control the temp.

Hello and welcome to SMF! Congrats on the new smoker!

Would you mind updating your profile to include your location? It helps when answering questions if we know what part of the world you are in!

I'm looking at adding that smoker to my MES40.
