Just bought a Masterbuilt 2 door propane smoker.  Early father's day gift.  Have never smoked before and I look forward to learning the "ropes" via this website.  What is my first step and what is the best item (beef, chicken, pork, ertc.) for the first trial?  Should I take the 5 day class?

As NoVaDoc said 3-2-1 ribs are pretty easy and if you follow it pretty hard to mess up. Chicken is also an easy but very good smoke to learn on.
