Hello, I kept going to family get togethers and hearing about everyone with a smoker. I decided to look into it and found the Cajun Express smokers that have a pressure chamber. I have been a fan of using the instant pot, so I thought it sounded pretty cool and I bought one! I have been using it a lot for the last few months. I am kind of a tinkerer so I made some improvements that maybe someone will find useful.

Welcome to SMF from North Texas! I have seen the Cajun Express Smoker, but have not heard of anyone with one. Would love to hear more.

The tuna was a little chewy, I may have overcooked it. It was very flavorful though! I cooked it about 10-12 minutes, opened it to check the temperature and it was already 145. I wanted to get it out at 125. I've been using a wireless thermometer but I forgot to charge the battery.
