Hello everybody. I'm new to smoking and have been reading this forum for a little while. First thing I smoked were a couple racks of ribs in my Weber gas grill. They turned out OK for a first try but obviously I learned a lot I could do better. Next thing I did was buy a pellet tube and cold smoked a few different blocks of cheese. That turned out great and I look forward to doing more of that soon. Then I got a Pit Boss Pro Series 4 vertical smoker for my birthday as my mother in law wanted me to smoke the turkey for Thanksgiving. Did a test run with a turkey, spatchcocked it and that turned out good as well but once again learned a lot I could do better. For Thanksgiving I did the turkey and it turned out great using apple pellets.

For various reasons (damage from when I first got it and leaking smoke around door and in upper corner of firebox) I returned the Pit Boss and decided to pick up a Camp Chef DLX 24. Haven't even had a chance to do the burn in on that but am itching to do so once the weather cooperates.

I'm looking forward to learning as much as I can on here and enjoying a lot of delicious smoked food in the future!
