Hi all---1oldog is new to the forum---I've been smiking for 35 years and my dad taught me originally---I smoke about 2000 lbs of meat, veggies, fruits, cheeses, nuts and anything else I can get into my smoker every year----I build my own smokers my first was a refrig and this last one is an 500 gallon oil barrel on end with a 24 inch well casing horizontally for my firebox---I usually use apple wood---easy to get here---Moscow Idaho---and am kind of a traditionalist---I like to finich all my stuff in the smoker.   Ive enjoyed all the recipies and info the forum has and really enjoy Jeffs websight---the info is priceless----hope to continue to learn and enjoy--------M
