Oregon rural 45 minutes from portland.
My name is Joe. I hunt big game and wish to start processing my own smoked meats. Brats, pepperoni, etc. I recently got an elk. I have a big chief smoker and a Treager BBQ. Interested in building a small smokehouse. But maybe a propane smoker would be easier? Nice to be able to control temperature. I have the cold smoker attachment for my Treager. I am interested in smoking bacon too. It's so expensive.

I have a 2'x2'x6' retired stainless steel fridge I made into a propane fuel smoker that is thermostatically controlled and also has a electronic pilot light ignition, works real well for me. Let me know if this type set up interests you.
