Thank you for the warm welcomes.
The unit (my baby) is called Dyna-flow Dutchess. (Yeah, I know dutchess is spelled wrong but I'm happy with it so it's going to stay that way.) This was first built in 2017 and rebuilt in 2021. The history of how it came to be is story for another time. I chose cinder blocks mainly because of their heat retention properties. They do degrade after a bit due to the high heat. This is mainly around the firebox and they are relatively easy to replace. There is an interior platform above the firebox. The smoke and heat travel in both directions, side to side, and enter the cooking chamber at both ends of the platform. There is a direct flue from the firebox that is used during the fire start. Once the fire is roaring, that flue is closed and a second flue is opened that directs the gasses through the cooking chamber. The lid is plywood. It has charred a little but never ignites. The hottest I've had the cooking chamber is about 375 F. For starters, the best way to get an idea of how my rig works is to watch a movie.
