A friend and I are getting into the catering business, this is our first major purchase, the guy who owned it previously used it for catering and it turns out pretty good cue, looking forward to our first big smoke. We rubbed it down today with some scotch brite pads, and scraped a bunch of the grease out of it, I think when it's all said and done she'll look pretty darn good! Also planning on a couple coats of heat resistant black paint, let me know what you think!

I love the Rivets on that thing...it looks bullet proof! Its going to look like something off an old timy locomotive after a good coat of black paint.

thanks man, yea we're pretty excited, we think it's gonna look good, just nervous about gettin her lit and started and really getting a feel for it.

That is one killer looking rig, I can't wait to see the finished product, if it were mine though, and I was going to use it for a catering business, I'd choose a color that would POP! a lot more than black, IMO, maybe fire engine red, and make it look like an old fire wagon.

honestly, all I've found in high temp paint is aluminum and black, although I haven't looked real hard, I figure if we wanna move up to something nicer some day it'll be easier to sell if it's black :)
 
ok, we got most of it painted with the first coat, finally..been hard with both of us working, anyways we lit her up last night just to see how it went, I used a chimney charcoal starter and got that goin real well (those things work awesome btw) and just poured the coals over the red oak in the firebox and she was goin in no time. The hottest I got the side with the firebox was around 250, but the other side was about 25 degrees cooler, was just wondering if anyone had any ideas about how to even out the heat a little better. We're doing a big smoke this weekend with a bunch of different meat to there will be qview out of this beauty pretty soon!
 
Need a baffle to channel more of the heat to the far side.
i'm sure one of the folks here who has built one can explain it to you.
 
That thing reminds me of one of those civil war iron clad boats. One of the coolest smokers I've seen. Good luck with the catering. Keep us posted on the ups and downs. I have a pipe dream of one day getting into that business myself.
 
just went to the hardware store and bought a 3 inch duct elbow, gonna put that in the far side pipe hole, which come in the side of the smoker not the top, and point it down so the heat has to get down a little closer towards the meat before escaping..a little frontier medicine :)
