This is my 2nd time ive ever truly smoked on a smoker and its on the smoker i built. Its a good feeling. She isnt pretty but she works great! Yesterday i did spareribs and they were really good. Today im trying my hand at brisket. Its been on for 6 hrs at 250°. The smoker holds temp very well. Im not sure if the fire bricks help or not but im leaving them in lol.
