Good day everyone.

Great forum here, I happened across it while searching for a recipe for pig tails.

A friend of mine got me smoking last year when he gave me half a salmon he smoked in exchange for sealing the rest of it up for him.

I went out shortly after that and purchased one of those R2D2 style charcoal smoker/grills but whenever I used it I always had a hard time trying to regulate the temperature so the smoker spent more time in the shed than being used. Earlly this spring I decided to upgrade to a Cuisinart electric smoker and now I am constantly browsing the local butcher's flyers for sales so I can purchase in bulk, smoke then seal and freeze.

So far I have smoked turkey, leg of pork, whole chickens, chicken and turkey wings and pork ribs. My favorite smokes to use so far are apple wood and Jack Daniels smoking pellets. Looking forward to reading the threads and experimenting with the different marinades and rubs posted.

Welcome fellow Canadian. I just started smoking last fall and was only getting fair results until I found this forum. There is so much information in the posts and the experienced members are very generous with their knowledge and help when you have a question. I am sure you will enjoy the forum as much as I have.
