Hello all,. I've wanted a smoker for some time as I enjoy the result from other family members. I finally got one for Father's Day. Masterbuilt MDS 230S. The Thermo King seemed overkill for my first one. I know it's not top of the line but hope for good results. I'm largely clueless but see a lot of good info here.

Seasoned it today and have a couple of pork loins that I hope to make delicious.
I've already sourced a cast iron pan to replace the chip tray as I've seen in many threads and videos.

Located in NW Indiana.
Hoping to have a ton of fun.

Just remember to be careful with that pork loin, it's pretty lean so don't over cook it!
 
Welcome from Ohio. On those loins remember USDA changed safe temp to 145F. Pull them around 137F and let them come up to temp and you will have juicy loins.
