Mine allows a 10* +/- so 20* swings.
I just was thinking a lower wattage element (using the rheostat) would SLOW the rise so there would be less momentum carryover.

I understand how to set the parameters, so I will adjust to 1*

my RTD is set just under the top rack (I don't use it, but for keeping my temp probes separated)
I had thought, too, about lowering it to nearer the element, but was worried about how to keep it clean.

perhaps mounting it on the back wall using a P-clamp and an offset....

I'm going to do a dry run.

Oh, do you have ballast in your water pan?
 
In my tests I had the probe nearer my meat being smoked. Thinking that was what I wanted to monitor. But I think next time I'm going to put it nearer the element so it is more closely reading the heat being produced, and use my ThermPro to monitor the products temperature.
I hope that makes sense.

Also, consider that by adding a rheostat, you will be affecting both sides of the temperature swing be reducing the wattage narrowing the bandwidth of the control.
In plain Engrish, you may find the difference widens, instead of narrows. Going to 20 degrees of swing, for example, instead of narrows.

I have a remote temp set with 6 probes, one I use to monitor temps at meat level.

I also have found my temp drops take a little longer than the climbs.
I also planning on insulating a box to install it in, and that should help.
