My name is Jason and I'm very new to smoking meats. I'm in Little Elm, Tx (just north of Dallas). I started hunting about 5 years ago and my wife started hunting with me 3 years ago. We decided this year to process the meat ourselves instead of taking it to the processor.
A buddy and I have also decided to learn how to make our own sausage and other meat goods.
I built a UDS last summer and have used it a few times with good to great results. I have seen some pictures of summer sausage being done on one so I'm really interested in that.
Anyway, prepare for some really stupid questions. :)
