Hi everyone suffering the cold weather in the USA.  I'm Stephen an expat living in Chile for 6 years.

I'm relatively new to all of this but I have been reading the forums for awhile now.  My Peruvian partner and I have decided to make some cecina de la selva (jungle ham) that he grew up on in Peru and it turned out really well.

So now I have a lot of questions.  I hope to become a participating member of the forums and to get to know many of you as time goes on.

It hot here in Santiago today but it is very beautiful here in Latin America.
