Hi Everyone,

Long time meat eater, first time smoker. Heard about this site from a friend and i recently purchased my first smoker. I picked up a cheap RiverGrille off set smoker and i am still trying to get the hang of it. We are currently stationed here in the UK and the cuts of meat are a little different from the US. As i type this, i have a small brisket going with very little to zero fat cap. Any tips for off set smokers or smoking in general are much appreciated!

Welcome to the board! Plenty of offset smokers here, myself included.

What woods are available to you?
Honestly I can pretty much get anything from Amazon. Not really knowing much, I bought some whiskey barrel chunks and have been using them today.

I'm looking forward to an American's view of their cuts. I know we got UK members, but it's hard to tell how different their cuts are with out our baseline to compare!
