Just joined the forum, but I've been smoking meat for a couple years now. I live in west Central Missouri, about 30 minutes from KC, MO.
I've got an old Charbroil smoker, Its nothing fancy, but to me it works great. I recently cleaned it all up and painted the outside with the high temp engine paint and replaced all the wood and hardware on it. I like how it works, and hope to try to make some modifications to it to try to get a more even cooking throughout the smoker.
I have never done any competitions, but have always wanted to try to see if my skills are as good as i think! To me, smoking is just something I truly enjoy! I love the smell of it, the challenge of getting something perfectly cooked that makes my family and friends jealous that they can't do! Hopefully I can learn some new tricks and techniques here, and only get better!
