Hey guys, new to the forum and new to smoking. Been wanting to buy a smoker for a long time and I'm glad I did. I've smoked stuff on the grill but keeping heat steady and consistant is tough. Last weekend I smoked a 14 lb brisket. Never could have thought about doing that on a grill. And WOW!! 16-17 hours on that thing and it was perfect. I started out with chicken and pork-butt. Didn't want to go too much big money on something since I had no idea what the hell I was doing. I read alot on forums. (this one being the best) But experience is the best teacher. I'm going to do a ham this weekend for Easter. Shouldn't be an issue there. Just don't over do it. But I would like to try Prime Rib. Very expensive cut and I don't want to mess it up. So any advice would be appreciated.
