Hello all!!

We went to a party a few weeks ago and someone had brought a smoked loin, it was pretty good, so in passing to my wife I said "A smoker would be cool for father's day". Well, she got me a MES and gave it to me a day early so I could get the MES ready for Sunday. I had a turkey thawing as I was going to cook it on my Holland Epic.

I went in blind!!! Put the turkey in before church. Looked at the vent on top and figured, "Hell keep it closed, lock the smoke in".................Well I got my first lesson on stingy tingy meat, the skin was thin ugly black, all to share with close family, and of course they all said it was good. LIARS, and I begged for a true review from them.

So then on fathers day on the way home we stopped to get stuff for turkey meal and grabbed a butt on the way thru meat isle (done several on Holland in past). Finally got to it yesterday...

So I googled "vent open or closed on Masterbuilt" and it took me to you guys. I have learned more in 30 minutes about the basics than I would have maybe learned in 20 smoke sessions.

The alarm went off at 330AM when the butt hit 200. It was a thing of beauty how moist and tender it was. Supper tonight will be awesome.
